Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 cup sliced purple onion
  • 1/2 cup chopped red bell pepper
  • 3 cups sliced zucchini
  • 1/2 cup frozen corn, thawed
  • 15 ounce can black beans, drained and rinsed
  • 8 6-inch corn tortillas
  • 1/4 cup sliced green onion
  • 3/4 cup Daisy Sour Cream
  • 3 tablespoons chopped fresh cilantro

Ingredients

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion, bell peppers, zucchini, and corn until tender and light brown. Add the black beans and stir to combine.
  2. Heat or grill tortillas and top with vegetable mixture.
  3. Garnish with the green onion, sour cream and cilantro. Serve with grilled limes, if desired.
