Spray a large skillet with nonstick spray. Cook and stir the turkey and onion over medium-high heat for 5 to 6 minutes or until the turkey is no longer pink.
Stir in the cottage cheese, cranberries, poultry seasoning, salt and pepper.
Heat the oven to 400 degrees. Line a baking sheet with parchment paper.
Place one sheet phyllo on a flat work surface (cover the remaining phyllo with plastic wrap to keep it from drying out.) Spray the phyllo sheet with cooking spray. Cut the phyllo lengthwise into 3 strips. Place a scant 1 tablespoon filling on one end of each strip. Fold the end of phyllo diagonally over the filling to form a triangle; continuing folding the strip, maintaining triangle shape, the entire length of each strip. Place the triangle seam side down on the lined baking sheet; spray the top with cooking spray. Repeat with remaining phyllo and filling.
Bake the triangles for 8 to 10 minutes until golden brown and flaky.
