Drain the tropical fruit; chop half of the fruit and set aside. Combine the chicken, chopped fruit, cottage cheese, cashews, cranberries, and Dijon mustard in a large bowl.
Season the salad greens with pepper. Combine the salad greens and the remaining tropical fruit on a platter.
Top with scoops of the chicken mixture and garnish with green onions. Serve with a drizzle of red wine vinegar and olive oil, if desired.
