  • 3 cups shredded rotisserie chicken
  • 24.5 ounce jar Dole® tropical fruit, drained
  • 3 cups Daisy Cottage Cheese
  • 1/2 cup cashew pieces
  • 1/4 cup dried, sweetened cranberries
  • 2 tablespoons Dijon mustard
  • 1 bag Dole® Greener Selection Salad
  • 1/8 teaspoon black pepper
  • 1 green onion, chopped


Drain the tropical fruit; chop half of the fruit and set aside. Combine the chicken, chopped fruit, cottage cheese, cashews, cranberries, and Dijon mustard in a large bowl. Season the salad greens with pepper. Combine the salad greens and the remaining tropical fruit on a platter. Top with scoops of the chicken mixture and garnish with green onions. Serve with a drizzle of red wine vinegar and olive oil, if desired.
