Slice the French loaf into 24 slices. Place the cut side up on a serving plate. Spread each slice lightly with jam. Divide the ham evenly onto each slice of roll, pleating to fit. Top each roll with a two slices of fresh apricot.
In a small bowl, mix the cottage cheese and crystallized ginger.
Spoon a scant tablespoon on each appetizer. Top each with a few chives.
