Ingredients

  • 6 large eggs
  • 2 tablespoons orange juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup Daisy Cottage Cheese
  • 1 tablespoon orange zest
  • 1 teaspoon granulated sugar
  • 1 cup sliced fresh strawberries
  • 4 10 inch flour tortillas, heated as directed on package

  • 1/8 teaspoon black pepper
  • 1 cup Daisy Cottage Cheese
  • 1 tablespoon orange zest
  • 1 teaspoon granulated sugar

  • 4 10 inch flour tortillas, heated as directed on package

Directions

  1. In a medium bowl, whisk the eggs, orange juice, salt and pepper.
  2. In a 10-inch nonstick skillet, heat the oil over medium heat. Add the egg mixture. Cook for 3 to 4 minutes or until the eggs are set but still shiny, stirring occasionally.
  3. In a medium bowl, mix the cottage cheese, orange peel and sugar.
  4. For each burrito, spoon 1/4 of the eggs along the bottom half of each tortilla to within 1 inch of the edge. Top with 1/4 cup of the cottage cheese and 1/4 cup of strawberries. Fold the bottom edge up over the filling. Fold in the sides. Roll up. If desired, cut each in half to serve.
