Combine the strawberries and 1/2 cup of the sugar in a medium bowl; let stand for 15 minutes, stirring occasionally.
Meanwhile, combine the cottage cheese, evaporated milk, remaining 1/4 cup sugar and vanilla in a food processor; process until almost smooth. Reserve 1 cup of the cottage cheese mixture and place the remaining mixture in a large bowl.
Combine the reserved cottage cheese mixture and strawberry mixture in the food processor; process until almost smooth. Alternately spoon the cottage cheese mixture and strawberry mixture into 8 (6-ounce) molds or disposable cups.
Swirl the mixtures together using a small thin spatula or knife. Insert popsicle sticks in the center and freeze for 3 to 5 hours or until firm.
