Directions

  1. Heat the oven to 400 degrees. Line 12 muffin cups with paper liners.
  2. Whisk the flour, sugar, baking powder, cinnamon, baking soda and salt in a medium bowl.
  3. Whisk the eggs in a large bowl until blended; whisk in the cottage cheese, butter and buttermilk. Stir the flour mixture into the cottage cheese mixture until combined; stir in the strawberries. Spoon into the muffin cups (the batter will be thick). Sprinkle with coarse sugar.
  4. Bake for 20 to 25 minutes or until lightly browned and a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 5 minutes; remove from pan.
