  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup Daisy Cottage Cheese
  • 1/2 cup unsalted butter, melted
  • 1/4 cup buttermilk
  • 1 3/4 cups chopped fresh strawberries
  • 1 tablespoon coarse sugar


Heat the oven to 400 degrees. Line 12 muffin cups with paper liners. Whisk the flour, sugar, baking powder, cinnamon, baking soda and salt in a medium bowl. Whisk the eggs in a large bowl until blended; whisk in the cottage cheese, butter and buttermilk. Stir the flour mixture into the cottage cheese mixture until combined; stir in the strawberries. Spoon into the muffin cups (the batter will be thick). Sprinkle with coarse sugar. Bake for 20 to 25 minutes or until lightly browned and a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack for 5 minutes; remove from pan.

Tried this recipe...so good! This will be a go-to for brunches at my house! Tried to print from my phone, didn't work. But printed recipe just fine from my laptop!
