Ingredients

  • 3 cups Daisy Cottage Cheese
  • 3 tablespoons salted butter
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 7.5 ounces chopped frozen spinach, drained and squeezed dry
  • 1/4 cup artichokes, quartered and cut in half
  • 1/8 teaspoon salt or to taste
  • 1/8 teaspoon black pepper or to taste
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup shredded Asiago cheese
  • 1/2 teaspoon hot sauce

Directions

  1. Place the cottage cheese in a food processor and blend for 45 seconds or until smooth. Set aside in the refrigerator.
  2. Melt the butter in a large skillet and sauté the diced onion on medium heat until translucent. Add the garlic and sauté for about 1 minute. Add the spinach and artichokes, season with salt and pepper and cook for about 3 minutes. Pull the skillet off the heat and let the mixture cool down.
  3. Once cooled add the Parmesan, Asiago, and hot sauce. Fold the spinach mixture into the smooth cottage cheese. Let rest for 20 minutes before serving.
  4. Serve with your favorite dippers. Best is served within one day of preparation.
