Heat the oven to 350 degrees. Coat an 11x7-inch baking dish with non-stick cooking spray. Cook the noodles according to the package directions and drain. Place the noodles in a large bowl. Stir in 1 cup of the sour cream, cottage cheese and green onions. Meanwhile, cook the ground beef in a large skillet over medium-high heat for 5 to 7 minutes or until thoroughly cooked and no longer pink in the center, stirring frequently. Stir in the tomatoes, salt and pepper. Simmer on medium heat for 10 minutes or until slightly thickened. Spoon half of the noodle mixture into the baking dish. Top with half of the hamburger mixture and half of the cheddar cheese. Repeat. Bake for 20 to 30 minutes or until the cheese is melted and the casserole is hot. Serve with dollops of the remaining sour cream.
