Ingredients

  • 4 strips turkey bacon
  • 6 large eggs
  • 2 tablespoons water
  • 1/8 teaspoon black pepper
  • 2 teaspoons vegetable oil
  • 1/2 cup chopped red bell pepper
  • 1 cup Daisy Cottage Cheese
  • 2 green onions, sliced
  • 4 10 inch flour tortillas, heated as directed on package

  • 1/2 cup chopped red bell pepper
  • 1 cup Daisy Cottage Cheese
  • 2 green onions, sliced
  • 4 10 inch flour tortillas, heated as directed on package

Directions

  1. In a 10-inch nonstick skillet cook the bacon over medium heat for 5 minutes or until crisp, turning several times. Remove from skillet.
  2. Meanwhile, in a medium bowl, whisk the eggs, water and pepper.
  3. Heat the oil in the same skillet over medium heat. Add the bell pepper. Cook for 2 minutes, stirring once or twice. Stir in the egg mixture. Cook for 3 to 4 minutes or until eggs are set but still shiny, stirring occasionally.
  4. For each burrito, spoon 1/4 of the egg mixture across the bottom half of a tortilla to within 1 inch of the edge. Top with 1/4 cup of cottage cheese and 1 tablespoon of green onion. Crumble a piece of bacon on each burrito. Fold the bottom edge up over filling. Fold in the sides. Roll up. If desired, cut in half to serve.
