  • 2 cups sliced fresh peaches (peeled), plums and/or nectarines
  • 14 ounce purchased pizza crust
  • 1 1/2 cups Daisy Cottage Cheese
  • 1 tablespoon chopped fresh mint


Heat the oven to 450 degrees. Peel and slice the fruit. Place the sliced fruit on a shallow baking pan. Bake on the top oven rack for 10 minutes or until tender and starting to char. Remove the fruit from the oven. If a crisp crust is desired, place the crust directly on the bottom oven rack and bake at 450 degrees for 4 to 5 minutes or until crisp. Press out any bubbles that form. Spread the cottage cheese over the crust. Top with the roasted fruit. Sprinkle with fresh mint. Cut in 8 wedges. Serve warm or cool. Tips: *If peaches aren't in season, you can use frozen peach slices. Just thaw and pat dry before roasting. **Rosemary may be substituted for the mint.
