Directions

  1. Heat the oven to 450 degrees.
  2. Peel and slice the fruit. Place the sliced fruit on a shallow baking pan. Bake on the top oven rack for 10 minutes or until tender and starting to char. Remove the fruit from the oven. If a crisp crust is desired, place the crust directly on the bottom oven rack and bake at 450 degrees for 4 to 5 minutes or until crisp.
  3. Press out any bubbles that form. Spread the cottage cheese over the crust.
  4. Top with the roasted fruit. Sprinkle with fresh mint. Cut in 8 wedges. Serve warm or cool.
