Blend cottage cheese in a food processor until smooth.
Transfer to a bowl and mix with flour until a sticky ball is formed.
Move dough to a baking sheet lined with parchment paper. Use a rolling pin to roll dough as thin as possible. Sprinkle with more flour if dough is too sticky, a tiny bit at a time. Brush with olive oil and bake 6 minutes.
Remove from oven and top evenly with pizza sauce and mozzarella. Bake 10-12 minutes until golden and bubbly.
