Ingredients

  • 1 pound 95% lean ground beef
  • 1/2 cup diced onion
  • 2 tablespoons olive oil
  • 1 tablespoon diced garlic
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 1/2 cups water
  • 28 ounce can diced tomatoes
  • 12 ounces dry penne pasta
  • 2 tablespoons all purpose flour
  • 1 cup Daisy Cottage Cheese
  • 1/2 cup half-and-half
  • 1/2 cup grated Parmesan cheese

Directions

  1. Brown the ground beef and onion in olive oil in a large skillet. Add the garlic, basil, pepper flakes and salt to the skillet and stir until fragrant (about 1 minute). Add 2 1/4 cups of water, the tomatoes with juice, and the dried pasta. Bring to a boil; cover and lower temp to a simmer. Cook for 15-17 minutes or until the pasta is tender, stirring occasionally.
  2. Combine the remaining 1/4 cup water and the flour; stir into the mixture in the skillet. Bring the mixture to a boil; cook until thick. Remove from the heat.
  3. Stir in the cottage cheese and half and half. Sprinkle with grated Parmesan cheese before serving.
