  • 3.4 ounce package coconut cream instant pudding
  • 1 cup coconut cookie crumbs
  • 8 pineapple rings, patted dry
  • 1 cup Daisy Cottage Cheese
  • 1/4 cup toasted coconut

  • 1 cup Daisy Cottage Cheese
  • 1/4 cup toasted coconut

Directions

  1. Prepare the coconut pudding according to the package directions.
  2. Sprinkle 2 tablespoons cookie crumbs in the bottom of 4 dessert cups. Layer with 1/4 cup pudding, 1 pineapple ring and 1/4 cup cottage cheese. Repeat the layers using the remaining cookie crumbs, pudding and pineapple.
  3. Top with toasted coconut.
