Whisk the all-purpose flour, whole wheat flour, sugar, pumpkin pie spice and baking powder in a large bowl.
Whisk the cottage cheese, pumpkin, milk, 5 tablespoons of the butter, eggs and orange zest in medium bowl until blended. Stir the cottage cheese mixture into the flour mixture until moistened.
Heat the waffle maker according to the manufacturer’s directions. Lightly brush with remaining 1 tablespoon melted butter. Pour 1/4-cup batter per waffle. Cook according to the manufacturer’s directions.
