Serves: 2 (3 per serving)


  • 1/2 cup gluten free old fashioned oats
  • 1/2 cup Daisy Cottage Cheese
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 2 egg whites
  • 1/2 teaspoon baking powder


Place all of the ingredients into a blender or food processor and gently blend until the oats are no longer visible. Spray a griddle or omelet pan with nonstick cooking spray and heat on medium to medium-high. Pour the batter to make 6 medium pancakes. Try to avoid making them too thick or the middle will not thoroughly cook. Flip when top is bubbly, and cook until lightly browned. Serve with additional cottage cheese, cinnamon and fruit as a topping.

Would rather NOT have pancakes! The consistency was odd and they had no taste. I made them a second time to be free and added a ripe banana but again horrible! WILL NOT MAKE AGAIN!

The recipe is super easy to make. The pancakes are really good with a nice chew to them because of the oats. The protein to carb ratio is amazing though. Low carb and high protein!!! Excellent breakfast treat!!
