Ingredients

  • 1 cup vegetable oil
  • 2 plantains, peeled and cut into 1/2-inch slices
  • 1/8 teaspoon salt
  • 1/2 cup Daisy Sour Cream
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla extract

Directions

  1. Add enough oil to 10-inch skillet to reach 1/2 inch depth. Heat the oil over medium heat to 350 degrees. Add the plantains.
  2. Cook for 2 to 3 minutes or until light golden brown on one side. Turn; cook 1 minute longer, until light golden brown. Remove to paper towels.
  3. Using a glass with a flat bottom, very lightly flatten the partially fried plantains. Return to the oil and fry until deep golden brown and tender inside.
  4. Sprinkle lightly with salt. Meanwhile, in a small bowl, mix the remaining ingredients. Drizzle over the plantains or serve as a dip.
