Ingredients

  • 1 cup steel cut quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1/4 cup walnut pieces
  • 1 tablespoon brown sugar
  • 1 1/3 cups Daisy Cottage Cheese
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup fresh blueberries

Ingredients

  • 1 cup steel cut quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1/4 cup walnut pieces
  • 1 tablespoon brown sugar
  • 1 1/3 cups Daisy Cottage Cheese
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup fresh blueberries

Directions

  1. Prepare the steel cut oats according to the package directions, with the addition of the cinnamon. Once done; cover and set the cooked oats aside. In a 10-inch non-stick skillet place the walnut pieces and brown sugar.
  2. Heat over medium heat until the sugar just begins to melt (6 to 10 minutes). Stir the sugar and walnuts constantly until all the sugar is melted (1 to 2 minutes).
  3. Immediately turn the walnuts onto a parchment lined baking sheet and cool completely. Break the nuts apart. Place ¼ of the cooked oats into each of four serving bowls.
  4. Top each with 1/3 cup cottage cheese, 1 to 2 tablespoons Craisins, 1 to 2 tablespoons blueberries, and about 1 tablespoon walnut pieces. Serve immediately.
