Serves: 12 (1/2 cup per serving)


  • 2 tablespoons olive oil
  • 1 cup refrigerated hash brown potatoes
  • 1/4 cup finely chopped green onions
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped red bell pepper
  • 4 large eggs, slightly beaten
  • 3/4 cup half-and-half
  • 1/2 cup Daisy Sour Cream
  • 1/2 cup finely shredded cheddar cheese
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup crumbled, cooked bacon


Heat the oven to 350 degrees. Spray 12 individual ½-cup ramekins with baking spray; set aside. In a 10-inch non-stick cooking pan, over medium heat, heat the olive oil. Add the hash browns, green onions, green peppers, red onions, and red peppers. Cook, over medium heat, stirring occasionally, until the potatoes are lightly browned (5 to 6 minutes). Place the potato mixture evenly in the bottom of each ramekin. In a large mixing bowl place the eggs, half and half, sour cream, cheese, flour, and baking powder. Using a wire whisk, mix well. Pour the egg mixture evenly over the potato mixture in the ramekins. Sprinkle each ramekin with the crumbled bacon. Bake until the eggs are set (about 20 minutes). Serve each with an additional dollop of sour cream, if desired. Refrigerate leftovers.

I first learned to make quiche when I began taking French in high school, and I have to say this is one of the more interesting recipes that I've seen. If you're a picky eater you can create this sans onions or peppers and add more cheese to make it your own, or even other ingredients you enjoy for your breakfasts and it will still be just as good. I think this is the perfect holiday/special occasion recipe to serve a family in the morning and I'll definitely be making these again!

I received a free bottle of daisy sour cream in the squeeZe container and it's the best! This recipe is super easy to make and delicious. I was surprised that my kids loved it and they were able to squeeze their own sour cream on top!

I recieved Daisy Sour cream for free and decided to try this reciepe. Glad I did. This was a great breakfast and a future side dish for Thanksgiving. I left out the bell peppers but served on the side for others who wanted a crunch. Thanks for the awesome recipe!

Breakfast is a big problem for us, so I have been looking for the alternative solution to skipping breakfast. I made this recipe, but created it on the bigger scale - it's easier to handle and this way I can make a whole lot at once - enough for a few days. Easy and delicious!

Since the first time I ever used and tasted Daisy sour cream, there has been no other for my eating and cooking needs. The clean taste will get you hooked! These mini quiche, are a wonderful delight and so easy. With Daisy, it's over the top in the quiche line of food. Thank you for such a great product.

Really enjoyed these. Quick and easy. Will freeze these and heat them for a fast breakfast. I used foil paper cups for easy clean up.
