Directions

  1. Heat the oven to 400 degrees. Line 24 mini muffin cups with paper liners. Whisk the flour, sugar, baking powder, cinnamon, nutmeg and salt in a medium bowl. Whisk the cottage cheese, oil and egg in a small bowl until blended.
  2. Pour the cottage cheese mixture into the flour mixture and stir until moistened. Spoon half of the batter into the muffin cups. Sprinkle with your choice of assorted add-ins (using 1/2 to 1 teaspoon per muffin).
  3. Top with remaining batter; sprinkle with sparkling sugar. Bake for 15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  4. Cool on a wire rack for 5 minutes; remove from pan. Additions: fresh blueberries and grated lemon peel, diced apples and pecans, dried cranberries and flaked coconut, mini chocolate chips, or poppy seeds.
