Ingredients

  • 1 cup peeled and shredded cucumber
  • 1 1/2 cups Daisy Sour Cream Creamy Ranch Dip
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 teaspoons minced garlic
  • 1/2 tablespoon lemon juice
  • 1 tablespoon fresh chopped dill
  • 1/4 cup cooked rice
  • 1/4 cup sliced cherry tomatoes
  • 1/4 cup diced cucumber
  • 1 tablespoon pickled red onion
  • 1 1/2 tablespoon Kalamata olives
  • 3 ounces grilled chicken
  • 1 small pita, sliced into wedges
  • 1 tablespoon crumbled feta

Directions

  1. Easy Tzatziki - place peeled and shredded cucumber in double-layered paper towels. Squeeze out as much water as possible. Mix with Daisy Ranch, olive oil, salt, pepper, garlic, lemon juice and fresh dill in a small bowl. Cover and refrigerate dip until ready to use. Dip may be refrigerated for 3-4 days.
  2. Assemble: arrange rice, tomatoes, diced cucumbers, onion, pita, olives and chicken in a bowl or plate. Sprinkle with feta. Serve with pita slices and ¼ cup of tzatziki.
