Heat the oven to 350 degrees. Generously spray a 9-inch pie plate with cooking spray. Sprinkle the pie plate with the breadcrumbs; tilt the plate to coat all surfaces.
Combine the egg substitute, milk, sour cream, chives, and pepper in a medium bowl; whisk until blended.
Sprinkle 3/4 cup of the cheese in the bottom of the pie plate; carefully pour the egg mixture over the cheese. Bake the quiche for 28 to 33 minutes or until it is puffed and set.
Sprinkle the top with the remaining cheese and the bacon pieces. Let the quiche stand for 5 minutes before slicing and serving.
