Serves: 6 (1 1/4 cup per serving)


  • 2 teaspoons vegetable oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 1/2 pounds Russet potatoes, peeled and cut in cubes
  • 2 1/2 cups 99% fat free chicken broth
  • 1 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 1 cup skim milk
  • 1 cup Daisy Light Sour Cream


In a large nonstick saucepan, heat the oil over medium heat. Add the onion and celery. Cook for 3 minutes or until crisp-tender. Add the potatoes, chicken broth, salt and pepper. Bring to a boil. Cover and reduce the heat. Simmer for 15 to 20 minutes or until the potatoes are very tender. Stir in the milk. Spoon half of the potato mixture with the liquid into a blender container and cover. Place a folded kitchen towel over the lid and hold in place. Blend the mixture for 30 to 60 seconds or until the desired texture is reached. If necessary, stop the machine and scrape the sides of the container. Pour the blended mixture into a heat-proof bowl. Repeat with the remaining potato mixture. Return all of the blended potato mixture to the saucepan. Fold in the sour cream. Cook over low heat until thoroughly heated (do not boil). Garnish each serving with freshly cracked pepper and fresh herb leaves, if desired.

My family and I love Fall! I look forward to making different recipes for them to try and fall in love with. I tried the Light Potato Soup, with a Dollop of Daisy and it was delicious. Even my little one ate it, and liked it. The flavors are there, the texture is great and it doesn't taste like a light soup. We will definitely be making this a household staple! (I received my Daisy sour cream for free, to sample and review. All opinions are my own)

I receive a sample of Daisy Sour Cream Squeeze for free but all opinions are my own. I tried this recipe using the daisy sour cream squeeze bottle, I had never before added sour cream to my soups, and yes I've been missing out a lot. Daisy sour cream gives this potato soup a creamier texture, the recipe is delicious, 'y family love it, I liked it because is a lighter version. If there is a potato soup that you need to try is this one. Your family will love you even more after trying this recipe.

I only use Daisy sour cream for anything. It has the freshest taste, not to sour and when I put it in this easy Potato soup recipe it made the soup more creamy and flavorful. Thanks to Daisy for the coupon and Influenster for allowing me to try and review this recipe and sour cream

I received Daisy Squeeze Sour Cream for free for testing purposes! I really liked this potato soup recipe,super easy to make,healthy,great flavor,even used a dallop of daisy on top!!
