Heat the oven to 350 degrees. Spray the bottom only of 13x9-inch baking pan with nonstick spray.
Beat the brown sugar, honey and butter in large bowl on medium speed until light and fluffy. Add the eggs and cottage cheese; beat until creamy, scraping the bowl if necessary.
Add both of the flours, cinnamon, baking powder, salt, baking soda and allspice; beat on low speed until mixed.
Beat the batter on medium speed until creamy. Beat in the coffee at low speed until the batter is creamy. Fold in the diced apple. Pour the batter into the pan.
Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool for 30 minutes before serving.
If desired, top individual pieces of cake with additional apple slices or walnuts and drizzle with honey.
