1 1/2 pounds ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 cups chopped fresh mushrooms
2 tablespoons all purpose flour
1 15 ounce can zesty tomato sauce with Italian herbs
1 14.4 ounce can diced tomatoes, drained
1 cup Daisy Cottage Cheese
2 cups shredded Swiss cheese
Directions
Heat the oven to 350 degrees. Spray a 13x9-inch baking dish with cooking spray.
Cook the pasta in salted water as directed on the package and drain.
Meanwhile, in a 12-inch nonstick skillet, cook the ground beef until no longer pink.
Add the onion, bell pepper and mushrooms to the ground beef. Cook for 5 minutes or until the vegetables are almost tender.
Stir in the flour. Add the tomato sauce and diced tomatoes. Cook the mixture until bubbly.
Combine the meat mixture with the cooked pasta and the cottage cheese. Spoon the mixture into the baking dish. Sprinkle with the Swiss cheese.
Bake the casserole for 20 to 25 minutes or until the cheese is melted and golden brown.
