WOW! I've been a breakfast lover my whole life of 56 years. I've gathered recipes, duplicated restaurant meals, and created my own concoctions in most every conceivable way. I simply love eggs and the diversity they allow a cook. But this dish.......blew me away! So tasty and has an excellent texture, not soupy or tough. Anyway, I have decided that this is simply the best breakfast dish I have ever eaten! Try it, you wont be disappointed! Note: I halved the dish except for 3 eggs, 3 cups of hashbrowns, and a whole bell pepper. Enjoy!
I made this last Monday (today is Friday) and I have eaten it everyday for breakfast except for one day, only because I ran out of time. Excellent way to use your old ham and make something yummy. I added a few extra eggs and hash browns and cooked it in a larger pan. Top with sour cream and pico=heaven!!! Thanks Daisy!!
My family scrapped the pan clean. The dollop of Daisy and pico really brought all the flavors out.

I was impressed that adding sour cream added so much flavor and made it something everyone in my home enjoyed! I will be remaking it for Christmas morning! I love breakfast casseroles, and this is a great one! In response to the reviewer who thought 185 g. carbs are way too much, that is the number of grams for the entire casserole, NOT per serving ( and remember this serves about 10 people!).
I got this recipe from my sister, she brought it to a 4th of July celebration. It was so good that I got the recipe and have made it several times.
Love this- bring it to all my work functions and it's always a hit. I make it the night before and put in a crock pot overnight for 8 hours. Always turns out perfect.
