Serves: 4

  • 1 pound fresh salmon filet
  • 2 teaspoons olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Daisy Light Sour Cream
  • 1 teaspoon dried dill weed
  • 1 teaspoon fresh grated lemon zest
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon capers, drained
  • 1 garlic clove, minced

Spray a grill grate with cooking spray or brush with oil. Heat a gas or charcoal grill. Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper. Grill over medium heat, skin side up, for 3 minutes. Using a broad spatula, turn the fish over; grill for 5 to 7 minutes or until the salmon flakes easily with a fork. Meanwhile, in a medium bowl, mix all of the remaining ingredients. Serve the sauce over salmon.

I made this sauce to go with our grilled salmon. But it was so delicious we put it on our green beans, too. I've made a lot of dill sauces over the years, but this one is by far the best. I made it about 30 minutes before we sat down to eat so that the flavors would meld and the sauce could thicken just a little. I'll be using this recipe again soon!

The seasonings in this sauce all mingle together so well! I feel like the sauce would be better if left to sit 30 minutes or so, but this is definitely a recipe I'll use again.
