Ingredients

  • 1 cup freshly grated extra-sharp cheddar cheese
  • 1/2 cup Daisy Cottage Cheese
  • 2 tablespoons Daisy Sour Cream
  • 1/3 cup jarred diced pimento peppers, well drained and dried
  • 1 tablespoon maynnaise
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 slices hearty bread such as sourdough
  • 1 tablespoon softened unsalted butter

Ingredients

  • 1/2 cup Daisy Cottage Cheese
  • 2 tablespoons Daisy Sour Cream
  • 1/3 cup jarred diced pimento peppers, well drained and dried
  • 1 tablespoon maynnaise
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 slices hearty bread such as sourdough
  • 1 tablespoon softened unsalted butter

Directions

  1. Add cheddar, cottage cheese, sour cream, pimentos, mayonnaise, garlic powder, onion powder, paprika, cayenne, salt and pepper to large bowl and mix until combined.
  2. Add additional salt and pepper if desired. Cover and chill at least 1 hour.
  3. Spread butter on one side of each piece of bread.
  4. Heat skillet to medium-low. Place bread unbuttered side down in skillet. Toast 1 minute.
  5. Flip buttered side down and spread 1/3 cup chilled pimento cheese onto 1 slice (reserving rest for later use). Cook 3 minutes.
  6. Top with remaining bread and cook additional 1 minute on each side. If browning too quickly, lower heat.
