Directions

Place the asparagus on a grill pan. Sprinkle with the salt and pepper. Drizzle with the olive oil. Grill the asparagus for 10 minutes just until tender-crisp. Meanwhile combine the cottage cheese, sour cream and milk in a blender or food processor; process until smooth. Add the lemon juice and lemon zest to the cottage cheese sauce; blend to incorporate. Spoon the sauce over the grilled asparagus and serve.

I recently made the Grilled Asparagus with Light Lemon Sauce for dinner and WOW! is all I can say! I had no clue that you could use sour cream in such a way! The recipe was extremely easy, fast and didn't require loads of ingredients. My sons are asparagus eaters when I make it but now I'm being asked to make the lemon asparagus only! Thank you Daisy for the coupon and thank you Influenster for the opportunity to try this sour cream out and the challenge to recreate a delicious dish!
