Serves: 8 (1/2 cup per serving)


  • 6 medium Russet potatoes
  • 2 ounces pancetta, diced
  • 1/4 cup sliced green onions
  • 1 cup Daisy Sour Cream
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 1 cup shredded Gouda cheese


Peel the potatoes and cut into 1 1/2-inch cubes. Place the potatoes in a 3-quart saucepan and cover by 1 inch of cold water. Bring the water to a boil. Cook the potatoes for 20 minutes or until easily pierced with a fork. Drain the potatoes. Meanwhile, in an 8-inch skillet, cook the pancetta over medium-low heat for 5 to 8 minutes or until crisp. Stir in the green onions and cook 30 seconds or until the onions start to wilt. Stir in the sour cream, salt and pepper. Heat the mixture just until warm. In a saucepan or large bowl, mash the potatoes. Mix the cheese and sour cream mixture into the mashed potatoes and serve immediately.
