Ingredients

  • 1/2 cup uncooked quinoa
  • 1 cup Daisy Cottage Cheese
  • 1/2 cup thinly sliced sugar snap peas
  • 1/3 cup sliced green onions
  • 1/3 cup shredded carrot
  • 3 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup shredded sharp Cheddar cheese

Directions

Heat the oven to 375 degrees. Coat 12 muffin cups with cooking spray. Cook the quinoa according to the package directions. Place in a large bowl; cool slightly. Stir in all of the remaining ingredients, except the cheddar cheese. Spoon the filling into the muffin cups and then sprinkle with the cheddar cheese. Bake for 20 minutes or until lightly brown around the edges and a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes. Remove from the muffin cups, running small knife around edge if necessary. Serve warm or at room temperature.

We found these just a bit boring, even with added oregano. A splash of salsa over the top did the trick. Glad to have the leftovers for a quick, healthy, high protein breakfast. I wonder how they will hold up in a lunch-to-go.

I used 1 cup of leftover quinoa, cooked broccoli instead of peas and 1/2 c peccorino romano cheese, 1/4 c cheddar to cut down on fat. If you use that combo, I'd cut out the salt. No sticking at all. Delicious.

As a previous commenter noted, this recipe works with whatever veg one has on hand. I used grated carrot, half an orange bell pepper diced, a small handful of fresh french green beans sliced thin, and a small clove of garlic. Added a bit of ground cumin as well. Quinoa is high in protein, as is the cottage cheese

Easy, I didn't use carrots or green onions, because I didn't have them. I had broccoli and red onions, so I chopped them up and threw them in. Y ou can use any veggie really. Also put in some minced garlic. These are tasty. My only complaint is they stick to the tins. I had to run a knife around them but they were stuck to the bottom. Maybe next time I will use foil baking cups.
