  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. Beat peanut butter and sugar together with electric mixer until smooth.
  3. Add egg, blended cottage cheese and baking soda. Beat until well combined.
  4. Roll 1 tablespoon dough into a balls and place 2-inches apart on baking sheets. If desired, make crisscross pattern with a cold fork.
  5. Bake until puffed and pale golden (about 12-14 minutes).
  6. Cool on baking sheet (about 2 minutes). Transfer to rack to cool completely before serving.
