Ingredients

  • 2 tablespoons sugar
  • 1/2 teaspoon , plus 1/ teaspoon ground cinnamon
  • 4 6-inch flour tortillas
  • 1 tablespoon unsalted butter, melted
  • 1 cup Daisy Cottage Cheese
  • 1 tablespoon honey
  • 1 cup chopped assorted fresh fruit (strawberries, blueberries, grapes, kiwi, and cantaloupe)

  • 1 cup Daisy Cottage Cheese
  • 1 tablespoon honey

Directions

  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Combine the sugar and 1/2 teaspoon of the cinnamon in a small bowl.
  2. Arrange the tortillas on a baking sheet; brush with half of the melted butter and sprinkle with half of the cinnamon sugar. Turn the tortillas; brush with the remaining butter and sprinkle with the remaining cinnamon sugar. Gently fold the tortillas in half; place toothpick in top to hold in place, if necessary.
  3. Bake for 10 minutes or until lightly browned and slightly crisp, turning halfway through baking. Remove the toothpicks and cool.
  4. Combine the cottage cheese, honey and remaining 1/8 teaspoon cinnamon in a small bowl. Spoon the cottage cheese mixture into the tacos; top with fresh fruit and serve.
