  • 1 cup Daisy Cottage Cheese
  • 1/4 teaspoon garlic powder
  • 1 cup shredded Mozzarella cheese
  • 1/2 teaspoon dried basil
  • 16 ounces prepared pizza dough
  • 1/3 cup thinly sliced zucchini
  • 1/2 cup sliced cherry tomatoes
  • 3 slices red onion, halved
  • 3 slices yellow bell pepper, halved
  • 1/4 cup grated fresh Parmesan cheese
  • 3 tablespoons fresh basil leaves

Directions

  1. Heat the oven to 425 degrees.
  2. Pulse the cottage cheese and garlic powder in a food processor until smooth. Add the mozzarella cheese and dried basil; pulse until combined. Shape the dough into a round on a parchment-lined baking sheet.
  3. Spread the cottage cheese mixture. Top with the zucchini, tomato, onion, and bell pepper; sprinkle with the Parmesan cheese.
  4. Bake the flatbread for 15 minutes or until the crust is golden brown.
  5. Sprinkle with the fresh basil right before serving.
