Heat the oven to 400 degrees. Line a large, rimmed baking pan with parchment paper.
In a large bowl, combine the oil, seasoned salt, and pepper. Slice the potatoes into 1/2-inch-thick slices and stir into the oil mixture until coated. Place the potatoes in a single layer on the baking pan. Bake for 40 minutes, turning halfway through baking, or until tender and browned.
Sprinkle with the cheese and bacon over the potato slices. Bake for 1 to 2 minutes longer or until the cheese melts.
Dollop each potato slice with the sour cream and sprinkle with chives.
