Ingredients

  • 9 inch prepared pie crust (pastry or gluten-free)
  • 2 cups Daisy Cottage Cheese
  • 2 large eggs
  • 2 tablespoons cream cheese, softened
  • 2 teaspoons grated fresh ginger
  • 1/2 teaspoon vanilla extract
  • 2/3 cup raw sugar

Directions

  1. Preheat the oven to 350 degrees.
  2. Place the cottage cheese, eggs, cream cheese, ginger, vanilla, sugar in a mixer and blend until smooth.
  3. Pour the filling into the prepared pie shell. Bake for 40 minutes.
  4. Cool to room temperature and then chill until ready to serve.
