Ingredients

  • 2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1/2 cup Daisy Sour Cream
  • 1/2 cup canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 3/4 cup semi-sweet chocolate chips

Directions

  1. Heat the oven to 350 degrees. Coat a 9x5-inch loaf pan with cooking spray.
  2. Whisk the flour, cocoa, cinnamon, baking soda and baking powder in medium bowl.
  3. Beat the sugar and eggs in a large bowl at medium speed for 1 minute. Beat in the sour cream, oil and vanilla until blended.
  4. At low speed, beat in the flour mixture just until combined. Stir in the zucchini and chocolate chips; spoon into the loaf pan.
  5. Bake for 1 hour 15 minutes or until a wooden skewer inserted in the center comes out clean.
  6. Cool in the pan on a wire rack for 10 minutes; remove from the pan. Cool completely.
