Directions
Seed and shred the cucumber. Roll the shredded cucumber in paper towels and squeeze to remove as much moisture as possible.
In a medium bowl, mix the sour cream and dip mix until blended.
Stir the cucumber and parsley into the dip.
Cover and refrigerate for at least 1 hour. Serve with your favorite dippers.
