Seed and shred the cucumber. In a medium bowl, mix the sour cream and dip mix until blended. Roll the shredded cucumber in paper towels and squeeze to remove as much moisture as possible. Stir the cucumber and parsley into the dip. Cover and refrigerate for at least 1 hour. Serve with your favorite dippers.

This dip recipe is so yummy! My 3 year old son loves ranch dip and veggies, but he's very picky. He ate this up! I used the Daisy Squeeze Sour Cream when I made this, which was easy and not as messy as trying to scoop sour cream into a measuring cup. I received Daisy Squeeze Sour Cream courtesy of Influenster and Daisy for testing purposes.

My son will eat anything, if dip is on the side. Especially ranch dip!! The best part about this dip is that it sneaks in a little extra vegetable! It goes great with just about anything, it's easy to make and it's always a winner!!
