Ingredients

  • 1 medium seedless cucumber, unpeeled, sliced 1/4-inch thick
  • 1 1/2 cups cantaloupe balls
  • 1 1/2 cups cubed watermelon
  • 1 tablespoon chopped fresh mint
  • 2 tablespoons honey
  • 1 1/2 teaspoons cider vinegar
  • 1 cup Daisy Cottage Cheese
  • 1 tablespoon sliced toasted almonds

Directions

Using a cookie cutter, cut the cucumber into flower shapes. Combine the cucumber, cantaloupe, watermelon and mint in a large serving bowl. Stir the honey and vinegar in a small cup and drizzle over cucumber-melon mixture. Top with the cottage cheese and almonds.
