Ingredients

  • 12 inch seedless cucumber, cut in 1-inch crosswise pieces
  • 1/4 cup hummus
  • 2 teaspoons diced pimiento, well drained
  • 1/4 cup Daisy Cottage Cheese
  • 2 teaspoons chopped fresh mint

Directions

Using a melon ball scoop, scoop out the center of each cucumber piece, leaving a thin layer of cucumber in the bottom of each cup. Fill each with about 1 teaspoon of hummus and a few pieces of pimiento. Top each with 1 teaspoon of cottage cheese. Sprinkle with fresh mint. Tip: For flavor variation, try a flavored hummus, such as roasted red pepper.
