I love egg salad sandwiches so I tried this recipe with varations. I love cottage cheese so I used that with med to hard boiled eggs and I'm not a big fan of onions so I reduced the onions to 1/8th of a cup and added an 1/8th of a cup of chopped celery, a little relish and seasoned pepper, parsley and replaced the ground mustard with paprika and sea salt. I chilled the salad and put it on the sandwich thins bread. Was delicious. This basic egg salad has so many possibilities of variety. Thanks Daisy for these recipes.
I haven't had egg salad in ages and decided to make this. I replaced the cottage cheese with 3/4 sour cream and 1/4 mayonnaise. I also added a little paprika and relish. Very tasty, and it only took about 5 minutes to make after the eggs were cooked. This is a quick and easy recipe to make anytime, especially for the summer. I received the sour cream complimentary for testing purposes.
I made this receipt except I replaced the one cup of cottage cheese with one cup of Daisy sour cream and added two tablespoons of Paprika. It made one of the better egg salads I have had. Without the Paprika it was a little bland for me and next time I think I will add some relish for a tangy flavor. Great base recipe you can add your own flavor too.

I really loved this recipe. It teasts great and my kids will eat it also. Lots of proten with lots of taste. I added just a little dill relish to give it that added falvor.
