Spray a large non-stick skillet and heat to medium heat.
In a large mixing bowl prepare the pancake mix according to the package directions.
To prepared pancake batter, add the apples, cherries, ½ cup cottage cheese, and cinnamon; mix well.
Place about 2 tablespoons of pancake mixture on the skillet. Cook the pancakes on first side until the mixture bubbles (about 2 to 3 minutes). Turn the pancake over and continue cooking an additional 1 to 2 minutes, or until lightly browned. Remove from the heat and set aside; keep warm.
Repeat with remaining pancake batter.
Place about 3 pancakes on plate. Top with about 2 large tablespoons of cottage cheese and sprinkle with about 1 tablespoon pecans.
Drizzle with maple syrup, if desired. Repeat with remaining pancakes.
