Ingredients

  • 1 pound Italian sausage
  • 12 ounces dry rotini pasta
  • 32 ounces lower sodium chicken broth
  • 2 cups chopped assorted bell peppers
  • 23.5-ounce jar tomato basil pasta sauce
  • 4 ounces mozzarella cheese, cubed
  • 1/3 cup halved pitted Kalamata olives
  • 1 cup Daisy Cottage Cheese
  • 1/2 cup shredded Parmesan cheese

Ingredients

  • 1 pound Italian sausage
  • 12 ounces dry rotini pasta
  • 32 ounces lower sodium chicken broth
  • 2 cups chopped assorted bell peppers
  • 23.5-ounce jar tomato basil pasta sauce
  • 4 ounces mozzarella cheese, cubed
  • 1/3 cup halved pitted Kalamata olives
  • 1 cup Daisy Cottage Cheese
  • 1/2 cup shredded Parmesan cheese

Directions

  1. Brown the sausage in a large skillet over medium-high heat, stirring frequently. Stir in the pasta and add the broth to cover the pasta.
  2. Bring to a boil over high heat and boil for 5 minutes, stirring frequently. Stir in the bell peppers.
  3. Continue cooking and stirring an additional 5 minutes or until the broth is absorbed. Stir in the pasta sauce and bring to a boil. Gently stir in the mozzarella and olives.
  4. Spoon the cottage cheese randomly over the top of the pasta and sprinkle with the Parmesan cheese.
  5. Cover and simmer at medium-low to low heat for 8 to 10 minutes or until the cheese is melted and hot.
