Thoroughly clean the potatoes. Rub each potato with olive oil and bake on a cookie sheet at 450 degrees for an hour or until tender when pressed. Remove the potatoes from the oven and cool 15 minutes or until comfortably handled. Cut each potato length-wise and scoop out the middle of the potato leaving about ¼ inch of potato in skins, taking care not to break skins. In a medium bowl mix the removed potato whites, cottage cheese, sour cream, diced green onions, and pepper. Scoop ¼ of the potato mixture into each potato skin boat. Sprinkle each with Cheddar cheese and diced bacon. Bake the potato skins at 450 degrees for an additional 10-15 minutes or until cheese has melted.

I had recently had the opportunity to review Daisy's new Squeeze Sour Cream for free, courtesy of Influenster and Daisy, and since I love sour cream on potato skins. It's delicious!!Especially, great was the squeezable sour cream. Makes it very easy to get just the amount you need, without all the mess!

This recipe was easy to make. I like potato and thought that sour cream would give it even more flavor. I received the sour cream as a free gift to test. I was right. It was delicious. It didn't take too long to make.

I had to make something for 15 to 20 pp, and thought this would work. A 5lb bag of spuds was olny 1.99.I used 1lb tubs of both. and maybe 7 strips of bacon, 1 bunch of green onion and 1 lb of sharp chedder cheese. All less than 15 bucks. It was something unexpected. My my guest love them.

It's delicious!! I, of course, added extra cheese and sour cream to the finished product (and left off the green onions, since I'm not a fan), but otherwise a very tasty snack. Especially, great was the squeezable sour cream. Makes it very easy to get just the amount you need, without all the mess!
