Ingredients

  • 1 yellow onion, chopped
  • 1 tablespoon vegetable oil
  • 2 20-ounce packages refrigerated sliced potatoes
  • 1/2 cup water
  • 1/2 teaspoon black & red pepper blend
  • 3 cups Daisy Cottage Cheese
  • 1 cup Daisy Sour Cream
  • 1 cup shredded reduced fat Cheddar cheese
  • 1/8 teaspoon paprika

  • 3 cups Daisy Cottage Cheese
  • 1 cup Daisy Sour Cream
  • 1 cup shredded reduced fat Cheddar cheese
  • 1/8 teaspoon paprika

Directions

  1. Heat the oven to 350 degrees. Spray a 13x9-inch baking dish with cooking spray.
  2. In a 12-inch nonstick skillet, cook the onion in the oil for 3 minutes or until slightly tender. Add the potatoes and water to the skillet. Cover and cook for 10 to 15 minutes or until the potatoes are almost tender, stirring occasionally.
  3. Stir in the pepper, cottage cheese and sour cream.
  4. Spoon the mixture into the baking dish. Sprinkle with the shredded cheese and paprika.
  5. Bake for 30 to 40 minutes or until bubbly and potatoes are tender. Let stand for 5 minutes before serving.
