  • 3 large eggs
  • 1/3 cup Daisy Cottage Cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh herbs (such as basil, dill, tarragon, or chives
  • 1 tablespoon unsalted butter


Blend the eggs, cottage cheese, salt and pepper in a blender until smooth. Add the herbs; blend just until combined. Melt the butter in a small nonstick over medium heat; swirling the skillet to coat the bottom of the pan. Pour the egg mixture into the skillet and cook just until the bottom begins to set. Using a heatproof spatula pull the cooked eggs towards the center, allowing the uncooked eggs to flow underneath, tilting the pan if necessary. When the eggs are cooked to desired doneness, but still moist, fold the omelet into thirds or in half and slide onto a serving plate.

My husband said this wa delicious. I added red peppers, onions and roasted potatoes. Also shredded cheese.
