Place the cottage cheese, lemon zest, and fruit spread in a food processor or blender. Cover and process for 20 to 30 seconds or until smooth.
Spread over the toasted bread and top with blueberries and ginger.
Tip: Instead the blueberries and ginger, try one of the following topping combinations. 1) 1/4 teaspoon cinnamon, 1 cup chunky applesauce, and 16 thin slices fresh apple. 2) 1 cup fresh raspberries and 1 tablespoon chopped mint. 3) 1 teaspoon grated orange zest, 2 medium peaches, sliced, and 1/4 cup toasted almonds, 4) 2 thinly sliced kiwi and 2 tablespoons honey.
