  • 1/4 cup chopped dried apricots
  • 2 tablespoons shelled pistachios
  • 2/3 cup Daisy Cottage Cheese
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon Dijon mustard
  • 4 slices whole grain toast
  • 1 cup loosely packed baby spinach leaves
  • 2 thin slices red onion
  • 1/2 cup shredded carrots


In the bowl of a food processor, pulse the apricots and pistachios a few times to chop. Add the cottage cheese, thyme and mustard. Process the mixture for 5 seconds or until thoroughly combined. Divide the cottage cheese mixture evenly over 2 slices of toast. Divide the spinach, onion and carrot over the cottage cheese mixture. Top with the remaining slices of toast. Serve immediately.

I made this as a salad, instead of a sandwich. Made everything per the recipe and put in a bowl instead of on toast. Very tasty and full of flavor. Another Daisy hit!
