Preheat the oven to 400 degrees. Heat 2 teaspoons of the oil in a cast iron skillet over medium high heat. Add the onions, sprinkle of salt, and stir frequently until onion has softened. Reduce the heat to medium low and partially cover with a lid, and allow to cook for 20 minutes, stirring occasionally.
Meanwhile, prepare the pizza dough by rolling out to 16-inch pie. Dust the pizza pan or baking stone with corn meal or spray with cooking spray to prevent sticking. Add the flattened dough to the prepared pan.
In a small bowl, combine the garlic with 2 teaspoons of olive oil. With a pastry brush, spread the olive oil mixture evenly onto the pizza.
Next, spread the cottage cheese evenly onto the pizza, and top with the caramelized onions. Layer the pizza with the pears, figs, and Gorgonzola cheese. Bake for 20-25 minutes until the crust is golden brown.
Move the pizza to a cutting board. Before slicing, garnish with the arugula. Add the balsamic drizzle, if desired. Cut the pizza with a pizza slicer into 8 even triangles.
