Ingredients

  • 1/2 cup sugar, divided
  • 1 large egg
  • 3 medium apples, peeled and thinly sliced
  • 2 teaspoons ground cinnamon
  • 1/2 cup heavy cream
  • 1 tablespoon dark corn syrup

Directions

  1. Heat the oven to 350 degrees. Coat a 13x9-inch baking pan with nonstick cooking spray. Combine graham cracker crumbs, oats, ½ cup flour, 2/3 cup brown sugar, and butter in a large bowl until blended. Reserve 1 cup for the topping and press the remaining mixture into a baking pan. Bake for 10 minutes or until lightly browned.
  2. Meanwhile, pulse ¾ cup cottage cheese, cream cheese, sour cream, ¼ cup sugar, 1 tablespoon flour, and egg in a food processor until smooth.
  3. Toss the apples, ¼ cup sugar, and cinnamon in a medium bowl until combined. Pour the filling over the baked crust and top with the apples.
  4. Sprinkle with the reserved topping. Bake for 35 to 45 minutes or until lightly browned and set.
  5. Meanwhile, combine the cream, 1/3 cup brown sugar and corn syrup in a small saucepan. Bring to a rapid boil over medium-high heat. Boil, stirring constantly, for 2 to 3 minutes or until slightly thickened.
  6. Cool the bars for 30 minutes and then drizzle with the caramel sauce. Cool completely before serving.
